Cashew and Cranberry Power Balls

Ingredients:

6 Medjool Dates

1/4 cup Cashews

1/2 Cup Almonds

1/2 Cup Dried Cranberries

1/4 Cup Dark Chocolate Chips

1 Tbsp Hemp Seeds

1/4 Cup Melted Coconut Oil

1/4 Cup Shredded Coconut + 1/4 Cup for Rolling Later

Method:

Add all ingredients to a food processor or blender and blitz until combined, however be mindful not to over blend as you want the mix to still have some texture and crunch. Roll out balls into evenly sized spheres and roll in some shredded coconut. Place in fridge to set for ~1 Hour. Enjoy within 5 days, after 5 days please discard if not all consumed.
