Green Herby Pasta

Makes 4 Serves

Ingredients:
3/4 cup soaked raw cashews
1 cup fresh basil leaves
1 cup fresh parsley
Juice of half a lemon
2-3 cloves of garlic
2 Tbsp Nutritional Yeast
1/4 cup Parmesan (*optional if you wish to make this dairy free, just add additional 1 Tbsp nutritional yeast)
2 Tbsp Extra Virgin Olive Oil
1 cup pasta water (keep aside from when you cooked the pasta)
Salt and Pepper to taste.
Pasta of your choice*

Green pesto
Add all ingredients, except spinach and pasta water to a blender, blend until combined, then add spinach and pasta water and blend until smooth. You may need to add pasta water gradually to ensure it doesn’t get too runny.

Combine pasta and green pesto in a large bowl or saucepan.

Optional: Cook some chicken breast and add on top for an additional source of protein

*Cook pasta as per pasta package instructions.
