Simple Chicken Noodles
This is a weeknight dinner staple! The chicken on this dish is so versatile that you can add it to salads, stir frys, pasta, sandwiches and rice bowls.
Makes 4 Serves
500g Chicken thigh or breast (if you prefer a leaner cut of meat - however thigh works the best)
Marinade Seasoning:
2 Tbsp Sesame oil
1 tsp smoked paprika
1 tsp turmeric
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp white pepper
Pinch of salt
340g Thin Egg Noodles (you can buy these fresh or dried - cook as per package instructions)
1.5 Cups Broccolini (chopped)
2 Cup Chicken Bone Broth or Stock (salt reduced)
1 Tbsp sesame seeds
Method:
Chop chicken into chunks, roughly half the size of your palm is ideal.
Add chicken into a bowl and add all seasoning ingredients. Mix together thoroughly and leave to marinade for ~1-2 hours. If you can’t leave for this long, leave to marinade whilst you prepare other ingredients.
Cook chicken on a medium heat, until golden. You won’t need to use any oil in the pan as the sesame in the marinade will be enough to ensure chicken doesn’t stick.
In a large pot, bring chicken bone broth to boil and add noodles. Cook until tender.
Chop broccolini into medium pieces and add to broth and cook for ~4 minutes.
Dish up noodles and add cooked chicken to a bowl. Top with a sprinkle of sesame seeds. Optional: Add chilli oil for an extra kick of spice.
